Roquefort PDO

Roquefort is a celebrated French blue cheese made from the raw milk of Lacaune sheep, known for its distinctive blue-green veins, creamy and crumbly texture, and tangy, salty flavour. It is aged for several months in the specific natural Combalou caves of Roquefort-sur-Soulzon, a region in southern France, which gives the cheese its unique characteristics. Protected by a PDO (Protected Designation of Origin) status, only cheese aged in these natural caves can be officially called Roquefort.
